Laureen Barber, Co-Owner and Design Director, Blue Hill New York

Co-owner of Blue Hill - a farm-to-table business with a restaurant in Manhattan and a working farm and educational centre in upstate New York – Laureen splits her time between two very different worlds.

As a native of Manhattan, Laureen Barber’s regular exposure to the open spaces of upstate New York has shaped her creative practise and is a constant source of inspiration for her work.

BLUE HILL NEW YORK

The first Blue Hill restaurant was opened in Greenwich Village in 2000. Showcasing a wide variety of local food and wine from nearby farms, it was a bistro for the neighbourhood. As Design Director, Laureen ensures that the design and graphic elements of each restaurant reflect the philosophy of the food.

LIFE IN THE CITY

“The West Village is one of my favourite places in New York. I love the little streets. Leeroy street, Commas street, Grove street. When I first got married, I lived in Barrows street, a cobble stone street. There was a park right across from us too so we had some nature.”

My routine changes by season. In the warmer months I spend more time in Stone Barns but during the school year I travel back and forth from the farm to the city.

“When we first opened Blue Hill in New York, it was just the three of us and we couldn’t afford to have a floral designer, so I started to develop my skills. I would go visit the flower market several times a week to see what was available.”

UNION SQUARE FARMER MARKET

“One of the great things about having the restaurant in the West Village is that Washington Square Park and Union Square Farmers Market are so close. I often cut through Washington Square when I’m walking to and from the farmers market because it’s quiet.

BLUE HILL AT STONE BARNS

Four years on from the opening of the Manhattan restaurant, Blue Hill at Stone Barns opened within the Stone Barns Center for Food and Agriculture in upstate New York. Sourcing from the surrounding fields and pasture, as well as other local farms, Laureen and the team highlight the rich variety of Hudson Valley produce and to raise awareness of the effect of everyday food choices.

LIFE IN THE COUNTRY

“I feel happier when I have a connection with the outside. In the city, I have to go down about 25 steps to know what the weather’s like, or whether or not I should bring a jacket. In the country I can just step outside. There is something about just stepping outside that I really miss when I’m in the city, the city has the vibrancy but the country has the calmness so I tend towards calm.”
